Paleo Baked Vanilla Granola

My favorite granola is one that I make from soaked and dehydrated nuts, but I don’t always plan 48 hours in advance to get it done, and sometimes need a quicker way to make it. This is a great quick make granola. It is delicious in its own right.

Paleo Baked Vanilla Granola



1/2 c ground flaxseeds
1/2 c raw pumpkin seeds
1 c raw cashews
1 c raw pecans
1/2 c raw almonds
1/2 c raw walnut (Or really any 3c of any combination of nuts that you like)
1/2 c pure maple syrup
1/3 c coconut oil
1 T vanilla
1/4 tsp cinnamon
If desired 1/4 c dried fruit (cranberries, rasions, apricots etc)

Preheat the oven to 325 degrees. In a food processor or blender grind the flaxseeds, pumpkins seed and nuts. Grind until they are all chopped up, not a powder, but very small pieces. Pour the nut mixture into a baking 6×8 baking dish and mix in the maple syrup, coconut oil, vanilla and cinnamon. Bake from about 30 minutes until the mixture is bubbling. Remove from the oven give it a stir and then let it cool in the pan. After it is cool, (about an hour) remove from the pan and mix in your dried fruit. Serve with your favorite nut milk.
